This is a quick breakfast that does not require overnight to set up. It can be made in a small casserole dish if desired.
Saute the bacon and onions in a pan until bacon is cooked and the onion is soft. Combine all the ingredients (minus the bread and the bacon onion mixture) and mix well. Place a few cubes of bread in each of 4 lightly oiled ramekins. Evenly distribute the bacon and onion mixture over the bread and then evenly distribute the rest of the ingredients. Ramekins will be at least 3/4 full. Bake on 350 for 20-25 minutes. Serve warm.
This can also be made in a small casserole dish or oven safe bowl.
