Delightful alternative to plain peas for sprint and summer goodness, or just remembering those times when it's winter and freezing.

1. Cook bacon in skillet until slightly crispy. Remove the bacon, but retain the grease in the pan.
2. Add finely sliced shallots to the grease, cook until browned (french fried onions).
3. Drain excess grease from shallots and set aside.
4. Separate the meaty part of the back from the fatty part and dice the meaty part.
5. Zest lemon and set aside.
6. In a medium saucepan, cook peas in boiling water for 3-5 minutes and drain.
7. Drain the water and add the butter, bacon, shallots and leman zest to the peas.
8. Season with salt and serve.
