For hotter hush puppies substitute drained chopped green chiles for the green onions.
1. Preheat oven to 425degreesF. Dry ingredients in a medium bowl; mix well. Add buttermilk, onions, egg, oil and hot pepper sauce, if desired; stir until mixed.
2. Generously butter a 9-inch square baking dish. Shape dough into 16 balls, about 1 heaping tablespoon each. Roll balls in melted butter; place in prepared dish.
3. Pour remaining butter over dough balls in dish. Bake until lightly browned and thoroughly baked in the center, 15-18 minutes. Serve warm.
