Cut potatoes into small cubes. Melt butter in large soup pan over med heat. add bacon, celery and onions. Stir fry 3 min. Add potato cubes, stir fry 5 min. Reduce heat to low. Add 2 cups milk, 1 cup water, and spices. (baked potato spice mix or salt and pepper). Cook for 5 min. Add cheese, cook 2 min.
