Basmati rice rinced to remove the starch and cooked with a measure of rice for a measure of water, counting about 100g per person.
Weight in about 400g + 100g per extra serving. I generally cook at least 4 servings as rice can be easily warmed up.
Place rice in a bowl and add cold water. Rince the rice with your hands to remove the starch. As the water turns cloudy, empty and renew with fresh water. Repeat the operation for a few minutes until you notice the water stays relatively clear as you stir the rice.
Place rice in a sieve to filter out remaining water and place in a pan
Add in the same weight of boiling water as you counted rice at the beginning.
Add some cardamom pods and close the lid.
heat up over moderate heat for about 20min until all the water ius absorbed.
If you cook it right, you'll end up with a little crusty layer of rice at the bottom of the pan. This is generally served aside in the middle east and declisiously crusty!
