Soak casings in water.
Cut meat into pieces the appropriate size for your grinder. For small grinders cut them to golf ball size pieces.
Set the sodium nitrate and encapsulated acid aside. Mix all remaining ingredients/seasonings and sprinkle half over the meat and mix buy hand. Then sprinkle remaining seasonings over meat and again mix by hand. To not over work the meat/seasoning mixture as the grinder will take care of that for you.
Double grind the meat using a 10mm or 3/8" plate then a 4.5mm plate or 3/16" plate.
Place meat in mixer, add 32 ounces of water and the sodium nitrate. Mix for one minute each direction for 8 minutes total. For the last minute add 1.5 ounces of encapsulated acid.
For extra kick you can hand mix high temp cheese and dried jalapenos before placing in stuffer. Use 2.5 pounds of high temp cheese per 10lbs of meat and 3 ounces of dried jalapenos per 10 pounds of meat.
Place ground and seasoned meat in stuffer. As you start the stuffer be sure to release the air as needed to prevent any air pockets in the final product. When you are done with a link back up the stuffer to release pressure and prevent product from continuing to extrude from stuffing horn. Note: Much like a caulk gun.
Place on smoker for 2 hours @165 then 2 more hours at 185 and then 205 if needed. Smoke until internal temp is 155 degrees +/-.
Ice bath the finished product until internal temp reaches 80 degrees.
