Make-a-head burritos for the freezer.
Preheat the oven to 350 degrees Fahrenheit. Combine Chili Powder, Coriander, Garlic Powder, Onion Powder, Salt, Pepper, Cajun Seasoning and Sugar. Rub the meat thoroughly with the mixture. Place seasoned meat in a casserole dish fat side up in the oven and bake for 1 hour uncovered. Remove from oven and add beef stock and jalapenos. Lower the temperature to 300. Cover tightly with foil and bake for 3 more hours. Let cool.
Shred brisket in pan. Heat beans until bubbling and mash.
Assemble:
Smear 2 tbsp beans on tortilla. Sprinkle 1 tbsp of cheese and add 1/8 cup meat. Fold and place in storage container. When reheating, microwave for 1 minute and continue in 30 second increments as needed. Let cool for 1 minute.
