Super easy soup to make - takes about 3 hours - very good
Cube the stew meat into bite size pieces - not too small. Add to large stock pot. Dice Onion add with Tomato Juice, stock, seasonings. Cover bring to a boil then simmer for 2 hours. Skim fat off top of pot. Add Celery, Frozen Veggies and Potatoes. Simmer for 1 hour more. Adjust seasoning to taste
We add sugar to round out the flavor so its not so acidic from the tomatoes
