Adapted from Rick Bayless
Render bacon under medium low heat. When almost crisp add onion, cook until golden, stirring often. Add garlic, cook few minutes then add rinsed beans, 2 quarts of water, remove beans that float. Add Epizote. Bring to a boil, reduce to simmer, partially covered until thoroughly tender, about 2 hours. Gently stir beans regularly and add water as necessary. Season with salt, simmer another 10-15 minutes, then remove from heat. Let cool completely then reheat.
