Spicy honey boneless chicken strips with homemade sweet potato fries
1.) preheat oven to 425 and oil baking sheet with extra virgin olive oil (you can also oil aluminum foil on the baking sheet)
2.) prepare the fries
I cut them into skinny pieces, mixed in a bowl w/ 1 tbps of extra virgin olive oil & 1/2 tsp of garlic powder then put into our toaster oven and air fried them for about 20 mins!
3.) In 3 separate dishes add:
1/4 cup tapioca starch to one
1 egg to one
1.5 cups of almond flour to one
4.) dip each strip of chicken in tapioca, then egg, then almond flour and lay on baking sheet (if you put baking sheet in fridge with the coated chicken it’s supposed to help the crust stay on better)
5.) bake chicken for 20 minutes
6.) while chicken is baking, make the sauce over the stove:
1/3 cup hot sauce
1/2 raw honey
1/2 teaspoon of garlic powder
7.) bring sauce to boil and once the chicken is done, drizzle all over the chicken and put back in the oven for 2-5 mins. You can save a little sauce to pour on top before serving as well.
Serve with celery and primal kitchens ranch dressing
