Preheat oven to 375.
Chop thetomato in 1/4 inch pieces. Chop basil and garlic. In a bowl toss tomatoes, basil and garlic with the vinegar and half of the salt and pepper.
Lay the chicken breasts flat in the bottom of a large baking dish and season with the remaining salt and pepper. Pour the tomato mixture evenly over the top of the chicken. Top with the cheese.
Bake on the middle rack for 35-45 minutes or until the chicken reaches an internal temperature of 165.
