For the creamy butternut squash mash (1 container) - boil the butternut squash cubes on the stove with water. Once soft, drained and return back to pan. Add a drizzle of olive oil. Add roughly half a can of coconut milk. Mix it up and then add the parmesan cheese, onion powder, garlic salt, cracked black pepper, pumpkin pie seasoning and cayenne pepper powder. Add chopped cilantro on top. Let it sit.
Now for the casserole:
I took the other container of butternut squash, red bell peppers and red onions tossed in olive oil to roast in the oven for about 30-35 minutes. I transferred all of that to a mixing bowl. I boiled some black beans, drained and added to the mixing bowl. I added my butternut squash mash to the bowl as well (for a creamy element and to amplify the butternut squash flavor). I also added minced chipotle peppers in adobo sauce to the mixing bowl. Just a touch of black pepper, cumin and coriander and mixed everything well. In a casserole dish, I added some organic red enchilada sauce. I placed some white corn tortillas at the bottom. I added my mixture to make a good layer and smoothed it out. I added some hot salsa on top, then layered some more white corn tortillas. I did another layer of the mixture and topped it with more salsa. I sprinkled some shredded Mexican 4 cheese on top and let it do it's magic in the oven. 350 degree 30 minutes ish.
This is a casserole BUT you can also make regular enchiladas instead using the same ingredients. Just have large enough tortillas and fill them up with the folded side facing down in the dish.
