Low carb chicken broccoli casserole
Preheat the oven to 350
Grease 9 x 13 casserole pan
On a medium fry pan Add broccoli, onion, bullion cube, water, olive oil and pepper
Cook covered for 10 minutes - stir occasionally
In a medium bowl combine chicken chunks, garlic powder, sour cream and ricotta cheese- mix til blended
After 10 minutes of cooking vegetables pour the broccoli mix into the bowl with the chicken. Stir until blended
Add only 1/4 cup of the shredded mozzarella to the bowl and stir
Transfer mixture into the greased pan and spread evenly
Spread the remaining mozzarella on top of mix
Bake 50 - 60 minutes - once the top layer of cheese is browned it should be done
