2+ hours total cooking time. May need to add additional tomato sauce if cooking a large amount of chicken. If possible you should de-bone the chicken and cut into small pieces that are easier to brown.
In skillet heat olive oil.
Add chopped onion and saute until golden.
Add green pepper.
Add Raw bacon, minced garlic, ground pepper, salt, oregano.
Simmer 1/2 hour.
Add can tomatoes, tomato paste.
Simmer 20 minutes.
In paper bag add chicken and flour until coated.
In another large skillet brown chicken on all sides in olive oil.
Add chicken to tomato sauce and add dry red wine.
Cover and simmer for 45 minutes or until chicken is tender.
Serve with rice.
