Chicken Quesadilla
Heat oil on medium to high heat in a skillet. Drain chicken, place in a mixing bowl and separate chunks with a fork. Add hot sauce and cayenne pepper and mix thoroughly. spoon mixture onto one half of a flour tortilla top with a handful of cheese and fold over. Fry 1 minute on each side. Remove from skillet and serve with sour cream for dipping.
