Quick and super delicious Chicken Tortilla Soup Recipe. Make as spicy as you like!
Boil Chicken breast and shred, put aside. Saute chopped onions and cilantro in oil in large pot until tender. Add chicken broth, beef broth, tomato soup, Veg-All, diced tomatoes w/chilis and ortega chilis to sauteed onion and cilantro mixture. Add shredded chicken breast. Add cumin and cayenne pepper. Stir and simmer for 1/2 hour.
I always add more cans of Veg-All because I like more veggies in the soup! I also cut up corn tortillas into strips and fry to sprinkle on top of the soup. Sour cream, cheese and sliced avocados are also a must to add to this delicious soup.
