Chocolate cookies rolled in powdered sugar
Mix oil, chocolate (or cocoa and oil) and sugar. Blend in one egg at a time until well mixed. Add vanilla and espresso powder. Stir in flour, baking powder and salt. Chill. Drop teaspoonful of dough into powdered sugar. Roll in sugar; shape into balls. Place 2 inches apart on greased or parchment covered cookies sheet. Bake 10-12 minutes at 350 degrees. Do not overbake.
