Chocolate Peanut Butter Cupcakes
1. Preheat oven to 350 degrees.
2. In a bowl, mix dry ingredients until well-blended. IN microwave safe mixing bowl, melt butter and semisweet chocolate; whisk until smooth. Add eggs, sour cream, vanilla and water; beat with electric mixer to combine. Add dry ingredients and beat until well blended. Mix in chocolate chips.
3. Fill greased or paper lined mini muffin pans 3/4 full. Bake in preheated oven 16-18 minutes. Let cool in pans 5 minutes; then remove to a rack to cool completely.
4. When cool, prepare frosting and frost cupcakes. Top each with a mini peanut butter cup.
5. Frosting: In bowl, combine all ingredients. Mix well on high speed of electric mixer until smooth.
