This popular favourite will never go out of fashion. And there are so many variations on this classic. Some are incredibly basic, combining just avocado, lime and salt, some use garlic instead of onion, or leave out tomatoes and coriander. Others are mouth tinglingly spicy, and the texture ranges from rough and ready to super smooth. This is my favourite version, but it's worth experimenting to find yours - the possibilities are endless.
1. First make the tortilla chips.
Preheat the oven to 220°C/fan
200°C/gas mark 7. Lightly brush
the tortillas with oil on both
sides. Then cut each tortilla into
eight triangles.
2. Put the cumin seeds into
a pestle and mortar with
½ teaspoon of sea salt and
lightly crush. Mix in the smoked
paprika. Put half of the tortilla
triangles into a bowl and add
half of the spice mix. Toss gently
with clean hands to coat. Spread
out in a single layer on a large
baking tray. Repeat with the rest
of the tortillas. You will need at
least three large baking trays for
this (or bake in batches).
3. Bake in the oven for about
5 minutes until crisp and golden.
Leave to cool slightly.
4. Meanwhile, make the
guacamole. Roughly chop the
avocado flesh, then transfer to
a bowl along with the chopped
chilli and tomatoes, lime
juice and zest, red onion and
coriander. Add a good pinch of
sea salt, mix well and check the
seasoning.
5. Mix the remaining 1/2 teaspoon
of sea salt with the lime zest and
sprinkle over the tortilla chips.
Serve straight away with the
guacamole.
