Clootie refers to the cloth that this fruit pudding is traditionally made in. Delicious served hot with jam and/or cream or custard. Leftovers can be fried in a wee bit of butter to re-heat.
Mix all ingredients together adding water slowly utill they all bind together.
Damp your cloth lay it out on a flat surface.
Heavily powder the cloth with plain flower.
Gather the cloth together tie with string tightly leave a bit of room to let it swell with no gaps.
Get a large pot of boiling water on stove with a small plate on the bottom.
Lift the cloth (Cloot) cloot with dumpling in smack bottob to flatten.
Fill the water half way up the dumpling but never over the top.
Simmer for 2 ½ hrs check water regularly.
I use a pillow case as the cloot. Just dont use a good one!
