Suggest a better descriptionpreheat oven to 350 degrees F
saute onion and pepper in oil until lightly browned. in 2 quart casserole dish, mix both cans of corn, muffin mix and beaten eggs. add sauteed mix, mixing quickly so careful not to cook the eggs.
in a seperate bowl, mix the sour cream and cheese. dollop spoonfulls over top the casserol.
bake uncovered for approx. 45 minutes
