Crawfish Monica is a popular food item at the Jazz & Heritage Festival in New Orleans. This is a family favorite.
1. Cook pasta in salt water according to the directions on the package. Drain, then rinse under cool water. Drain again, thoroughly.
2. Melt butter in large pot and sauté chopped seasoning and garlic. ( I usually put the chopped seasoning through a food processor so it’s almost a puree – kids don’t like to crunch on onions)
3. Once seasonings are cooked down, add crawfish, heavy cream, milk and Velveeta – sauté until bubbly.
4. Add Tony Chachere’s - 1 big pinch then taste. Add more as needed but tasting before adding the next pinch until you think it's right.
5. Cook for 5 - 10 minutes over medium heat until the sauce thickens. If the sauce is too think, add more milk or heavy cream.
6. Add the pasta to the pot and toss well. Let it sit for about 10 minutes over very low heat, stirring often.
7. Serve immediately
If using frozen crawfish, soak crawfish in ice water with a splash of Crab boil for at least 30 minutes. Drain water before adding crawfish to pot. This gives the crawfish a much better/spicy flavor.
