The original recipe is from Ina Garten, I modified it a fair amount and now it is the best apple crisp I have ever made. This recipe is also made in a 10 x 14 dish so it will yield 12 servings min.

1. Preheat oven to 350 degrees F. Butter a 10 x 14 casserole dish.
2. Peel core, quarter and slice apples into 1/4" slices. Combine the apples with the zests, juices, sugar, flour and spices. Pour into the dish.
Note: For the apples you can mix and match any kind of apples that are good for baking. I used Honey Crisp and Golden delicious and it was wonderful.
3. To make the topping, combine the flour, sugars, salt, oatmeal, and cold butter in the bowl of a Kitchen Aid mixer fitted with a paddle attachment. Mix on low speed until the mixture is crumbly and the butter is the size of peas. Scatter evenly over the apples. Don't spread and or flatten the topping with your hands, it should look like gravel.
4. Place the dish on a sheet pan and loosely tent with foil. Bake for 15 minutes, remove the foil and bake for another hour. Check and make sure the apples are cooked through. If not, bake another 10-15 minutes longer making sure not to allow the topping to turn to dark or even burned.
