Popeye's style chicken strips with cajun fries.
Chicken Marinade:
1. Wash and pat dry chicken breast halves.
2. Slice chicken breast halves into chicken strips.
3. In a large bowl, combine
chicken strips
1/2 cup water
1 tablespoon Season Salt
1/2 tablespoon of Baking powder.
4. Mix thoroughly, cover and place in refrigerator for 1 hour.
Dry batter:
1. Add 1 to 2 cups of flour into a large bowl and set aside.
Wet batter:
1. In a large bowl, combine
3 eggs, 1 cup flower
12 ounces Club soda
1 tablespoon Seasoning salt
1/2 tablespoon Onion powder.
2. If making Cajun fries, double the mixture and reserve half in a large bowl.
Seasoning Flour:
1. In a large bowl, combine
3 cups flower
1 tablespoon Onion powder
2 tablespoons Cayenne pepper
2 tablespoons Chili powder
2 tablespoons Paprika
2 tablespoons White pepper
2 Tablespoons Season salt.
3. If making Cajun fries, double the mixture and reserve half in a large bowl.
Cooking:
1. With the skin on, cut potato's in half length wise.
2. Slice french fries by slicing the potato halves length wise, and slicing those sections into the desired thickness.
3. Rinse and set aside to dry.
4. Heat oil on stove until hot to a temperature of 350 degrees.
5. Blanch french fries in hot oil for 3 minutes and put into a large bowl.
6. Remove the chicken from the refrigerator.
7. Take each chicken strip and coat first in the dry batter, then the wet batter and finally in the seasoning flour.
8. Add to hot oil and fry for 5-6 minutes. The oil temperature will drop once the chicken is added, adjust heat during cooking to maintain 325 degrees.
9. Remove and place on a plate lined with paper towels.
10. Add reserved seasoning flour to the bowl of french fries and toss to evenly coat.
11. Take coated potato's and drop into bowl of reserved wet batter.
12. Carefully place potato's into oil and fry for 5 - 6 minutes.
