Serving size (4) is for chicken salad only. Combine mayo and lemon juice. Then toss chicken and the remainder ingredients. Combine will mayo mixture and chill before serving for best results. Make a sandwich and serve other ingredients on the side.
The book uses an Italian coleslaw recipe; 1 1/4 cup cabbage, 1/3 cup carrots, 1/3 cup red bell pepper, 2 tablespoon olive oil, 3 tablespoon red wine vinegar, 1/4 celery seeds. Combine and chill for 15 minutes or more. Any substitute vegetable will work instead
