Combine sherry, soy sauce, garlic, ginger, cayenne and water in a large skillet. Add chicken; turn to coat; bring to boiling; lower heat; cover; simmer about 20 minutes. Remove cover, turn chicken, raise heat so liquid boils briskly. Turn chicken occasionally and cook until liquid is evaporated and chicken is golden, about 10-20 minutes or until chicken is cooked through.
