An Indian style lentil recipe, which you can serve with your favourite Indian dish.
Prepare half a vegetable stock cube in a cup with the boiling water.
Finely slice your clove of garlic.
Slice your half an onion.
Heat half a tbsp of butter or margarine in a saucepan.
Fry the cumin seeds for about a minute. Keep them moving so they don't burn.
Add lentils to the pan, with the stock you prepared in step 1.
Then the garlic.
Finally add the spices; ground coriander, garam masala and turmeric.
Bring the water to the boil and then allow to simmer. (Check packet instructions for timings).
Scoop of the sediment from the top of the water.
We will now cook our onions separately. (I usually microwave, but you can fry if you prefer).
Put the chopped onions and remaining half tbsp of butter into a microwave bowl.
Heat on full-power for 2mins, stir and then another 2mins. Repeat until they are tender.
Finely chop your fresh coriander.
Give the lentils an occasional stir to prevent them from sticking to the pan. Check on them every 5 minutes. When they are soft they are ready.
Take the pan off the heat and fold your onions and fresh coriander into the mixture.
Serve.
Optional: Blend everything with a hand-blender at the end.
Hint: Be sure to use only a wooden spoon during the cooking process.
