Rinse and drain liquid from all but Zucchini; Diced Tomato and Chicken or Beef Broth.
Combine all in 5QT pot.
Bring just to a boil. Reduce to low and simmer for 3 minutes.
*Beef Shank: If using start here first. Add salt & pepper then brown with olive oil in soup pot. Then add broth/bouillon/water (as needed) and simmer for 1.5hrs. Add all veggies, as above. Bring just to a boil. Reduce to low and simmer for 3 minutes.
*Chicken: If using start here first. Add salt & pepper and lightly brown in soup pot. Then, cut up chicken and return to soup pot. Then add broth/bouillon/water (as needed) and add all veggies, as above. Bring just to a boil. Reduce to low and simmer for 3 minutes.
