Steel cut oats and eggs over easy
1 red, 1 yellow, 1 tsp per serving
Bring water to a boil
Stir in oats, reduce heat to low and simmer oats 5-7 minutes
Meanwhile heat a large skillet on medium heat and spray with cooking spray
Add 1 tsp oil and swirl to coat
Crack each egg in a small bowl and slowly add to skillet.
Heat 5-7 minutes on medium until bottoms are crisp and tops are set.
Serve over oatmeal.
