Whisk the vinegar, mustart and oil to make the vinaigrette. It can be made a few hours in advance, covered adn kept refrigerated. Whisk or shake well before serving.
When ready to serve, add the peppers and cheese to the fava beans and toss withe osme of the vinaigrette. Place the greens in another bowl and toss with some of the vinaigrette. Garnish with chopped parsley. Serve immediately.
