Fried Fruit Bat is a Micronesian delicacy.
This isn't a very good dish, but its 100% real and cooked in this manner.
Take the fruit bat, clean out its belly, intestines and lungs. Leave eyes and teeth along. Do this in same way might clean a chicken. Don't bother cleaning off the bat fur. Simply rub the wet bat with coconut and set aside. (1 bat per person). Skewer the bat through its lower back and upper back. Be careful to not skewer the head.
Bring Oil up to a high temperature.
Carefully lower bat in oil and let fry, about 4 minutes for a large bat, or around 3 for a smaller bat. Remove with crispy and sprinkle salt to taste.
Serve hot on a bed rice.
When you are done, should taste like pigeon. Don't expect to "fill" up on a single bat, but then again, its less likely you'd even finish one bat.
