Fried spring rolls have a crispy golden shell, soft and sweet filling from meat, shrimp and vegetables in harmony. It's very popular
Preliminary processing of ingredients: Wood ear, soaked shiitake mushrooms, washed, drained and finely chopped. Carrots, kohlrabi, beans, onions, thinly sliced. Soak vermicelli soft, dry, cut into small pieces (should not be soaked too much). Wash coriander, scallions, finely chop. Chopped dry onion. Fresh shrimp peeled, then diced.
Mixing: Put the meat in a pot/or bowl, add 1 tablespoon of cooking oil, 1 teaspoon of seasoning, 1 teaspoon of salt (powder), 1 teaspoon of fish sauce, 2 teaspoons of pepper, mix well. Then continue to mix in the vegetable mixture. When preparing the spring rolls, add eggs to avoid watery fillings.
Package of spring rolls: Put the rice paper rolls on a flat surface, use a towel to soak a little beer for moisture to spread evenly for soft spring rolls, add another 1/2 of the spring rolls to avoid breaking the filling when frying. Scoop the right amount of filling, at this time add 2-3 pieces of diced fresh shrimp and pack it evenly.
Fried spring rolls: Should fry 2 times, spring rolls will be crispy and delicious. For the first time, add hot cooking oil (try the end of the chopsticks to be bubbly), fry the spring rolls on medium heat, when the spring rolls are about 70-80% cooked, then take them out and let the oil blotting paper cool. Then, divide into batches (equivalent to each meal), and then freeze.
