VITAMIX RECIPE
- Preheat oven to 350 degrees. Line a large baking sheet with parchment paper. Place all coating ingredients (honey through cashews) into the Vitamix container and secur lid.
- Select Variable 1.
- Switch machine to Start and slowly increase speed to Variable 10.
- Blend for 30 seconds or until smooth. If necessary, scrape sides of the contrainer with a spatula.
- In mixing bowl stir together all granola ingredients (oats through pumpkin seeds). Pour cashew coating over gramola mixture, mix well.
- Pour cereal mixture onto prepared sheet pan. Bake for 35 to 40 minutes, stirring every 10 minutes, or until cereal is lightly browned.
- Remove fro oven; cool completely. Store cereal in covered container.
Serving Idea: Layer Fruit Granola with Cashew Coating in tall parfait glasses with plan greek yogurt and lots of fresh blueberries. Serve with Glorious Morning Muffins and Chocolate Hazelnut Spread.
If entertaining at breakfast time, ass a topical twist with Fruit Granola with Cashew Coating served in hollowed-out small pineapples or orange havles, topped iwth a dollop of pineapple yogurt and sprinkled with additional shredded coconut. Serve with Lemon Ginger Muffins and Key Lime Kiwi Smoothies garnished with skewered pineapple chunks and lime slices.
