Coat salmon in a delicious honey, lemon and dill sauce, grill for 10 minutes and then cover in a creamy garlic, bacon and dill sauce
Mix together 1 tablespoon of dill, 1 tablespoon of olive oil, the lemon zest, lemon juice and the honey
Lay the salmon fillets on a baking dish. I know people generally season with salt but you can skip this as enough salt comes from the bacon later.
Pour the honey and dill mix over the fillets and use your fingers to ensure that it is coated over all the fillets before leaving them skin side down in the dish to one side.
Turn your grill on to medium heat to warm up.
In the meantime finely chop the shallot and preferably use a garlic press on the garlic, otherwise finely chop that too.
Slice the bacon into small 0.5-1cm squares.
Place the salmon fillets on a lower shelf under the grill and set the timer for 10 minutes. May require 12 minutes but check after 10 minutes.
Place the other tablespoon of olive oil in a medium to large frying pan on medium heat and add the bacon. Cook for 3-4 minutes (depending on how well done you like your bacon) and then add the shallot and garlic, continually mixing to avoid burning. It's optional but if you fancy something a bit extra you can add half or a whole chilli padi (small hot chilli) with the seeds removed.
Cook for 3 minutes, turn the heat down to low-medium and add the butter. Cook for 1 minute and add the milk, cream and remaining tablespoon of dill.
Continue cooking for around 5 minutes. Exact time will depend on how thick you like your sauce, continue cooking down until you reach the desired consistency.
At the 10 minute mark check on the salmon. If beginning to nicely brown then turn the heat off and remove from the grill.
When the sauce is ready pour evenly over the salmon and serve immediately.
Would go nicely with roasted potatoes and/or roasted vegetables .
