Beat egg, milk, applesauce and vanilla together in small bowl.
In large bowl mix flours and the rest of the ingredients .
Stir egg mixture into the dry mixture just until mostly blended (ok to have some small clumps)
lightly grease griddle heat to med low. Use about 1/3 cup of batter per pancake spreading it a little bit. Cook til edges are starting to look dry and the middle is developing air bubbles. Flip and continue to cook for a minute or so.
Serve with warmed syrup of your choice.
