You can try this easy recipe with a whole chicken or chicken thighs or breasts. And you can vary the taste with my different rubs and seasonings.
Whole Chicken – Preheat oven to 350.° Shake bottle. Rub 4 to 5 Tbsp. of Ka‘iulani Spices Hawaiian Spice all over chicken, inside and out, including under the skin of the breast. Marinate preferably over night, but 6 hours will do nicely or even 1 hour in a pinch. Put chicken on a roasting rack and place in a roasting pan, adding water, broth or wine and cook for 1 hr. 15 min. NO NEED FOR BASTING. Skin will be crispy. Meat moist and flavorful. Variation – if you want to try Ka'iulani Spices Chinese 5 Spice or Ka'iulani Spices Alaea Sea Salt with Garlic & Herbs, use only about 2 Tbsp. for a roast chicken.
Chicken thighs or breasts – Preheat oven to 350.° Shake bottle. Using approx. 2-3 teaspoons per piece, rub Ka'iulani Spices Hawaiian Spice on both sides of thighs or breasts and under the skin. Even if you don’t eat the skin, leave it on to keep chicken moist when cooked. Skin will be crispy and tasty, and you can decide later whether to eat or discard it. Bake for 50 minutes for thighs and approx. 40 minutes for breast, or you can grill them. So easy and so good! Variation – if you want to try Ka'iulani Spices Chinese 5 Spice or Ka'iulani Spices Alaea Sea Salt with Garlic & Herbs, use only about 1 teaspoon per piece.
