Our favorite dip! Fresh, slightly fruity & a little sweet. A real crowd pleaser. Also travels well and makes a great side dish for BBQ's, picnics & pot lucks - especially as it's very good at room temperature.
Bake sweet potatoes until fully cooked, see notes below. Allow the potatoes to cool (1 hour or more)l, then remove the skins and discard them, retaining the flesh.
Zest orange. Using fresh orange zest is the reason for the very fresh lively taste of this hummus.
Place all ingredients in a food processor and blend on high speed until smooth. At this point just adjust the seasonings as you see fit. You may want to add more salt or sugar depending on the sweetness of the potatoes. To make a smoother, creamier batch, add a extra lemon juice until it reaches the preferred consistency.
Serve as a dip with fresh vegetables, crackers, or tortilla chips. Or, if you're adventursome, keep the batch fairly thick and serve as a side with BBQ Chicken (it is after all, mashed sweet potatoes - with flavoring).
Baking sweet potatoes - cut off ends and place on baking pan/sheet (to catch the drips), bake at 400 degrees for 60 minutes (for a large 1 lb potato). Skins pull off easily after baking.
