Original title: Spinach & Artichoke Cheese Custard
Preheat oven to 350F
1. In a large bowl, whisk eggs, cottage cheese, 1 cup jack cheese , parmesan cheese, salt and nutmeg until well blended.
2. Coarsely chop artichoke hearts.
3. With your hands squeeze as much liquid as possible from spinach.
4. Stir artichokes and spinach into egg mixture.
5. Spread mixture level in a buttered shallow, rectangular 3-qt casserole.
6. Spread remaining 1 cup jack cheese evenly over the top.
7. Bake in a 350 degree oven until custard is firm to touch in the center - approx. 25-40 mins.
8. Let stand about 10 minutes after removing from oven.
9. Cut into squares and serve.
