With Cilantro-Lime Rice
Cook Rice
-To a medium pot add Rice and 1 1/4 cup Water
-Once boiling cover and reduce heat to medium-low. Cook for 12-15 min
-Set aside for 5 min off heat and still covered
Prep Veggies
-Zest then juice half the Lime
-Peel then grate Carrot
Start Pork
-In a large pan heat 1 teaspoon Oil
-Add Pork and 1/4 teaspoon Thai Spice Curry Seasoning, 1/4 teaspoon Cumin, 1/4 teaspoon Garlic Powder, 1/4 teaspoon Ginger. Cook for 4-5 min breaking up Pork
Caramelize Pork
-To the pan with the Pork add 2 teaspoons of Sugar and 1 tablespoon Soy Sauce. Increase heat to high and cook for 3-4 min until Pork is caramelized
-Remove the pan from heat
Dress the Veggies and Finish Rice
-Meanwhile in a large bowl whisk together Lime Juice, 1/2 teaspoon Sugar and 1 tablespoon Oil. Add Baby field greens, Carrots, Cabbage
-Fluff Rice and stir in Lime Zest
Plate and Serve
-Plate meal and drizzle with Sweet Chili Sauce
