Although Lobster Newburg was created at New York's Delmonico's in the late 1800's, it was William Howard Tafts favorite recipe while he was president, 1909 - 1913. From "Unforgettable, 100 Years of Timeless American Recipes," by Sarah Dawson.
1- In a medium saucepan, melt butter. Stir in flour and salt; cook, stirring until mixture is bubbly. Slowly whisk in milk, stirring constantly until mixture is smooth. Add cream and cook, stirring ostantly, until mixture thickens and boils.
2- Stir a little of the cream mixture into the egg yolks, whisking constantly. Return mixture to pan and bring back to a boil. Stir in sherry.
3- Remove from heat and stir in lobster. Serve over toast points or in pastry shells.
