This recipe came about after I found a low carb hot cereal that I really liked, but didn't want to pay the high price to have it on a regular basis. After reading the ingredients I thought I could probably make something similar for less money, and actually came up with a recipe I like better. The recipe is for one good-sized serving.
Mix all dry ingredients well in bowl.
Add boiling water and stir until mixture starts to thicken.
If a thicker consistency is desired, microwave on high for 1-2 minutes.
Add any of the following: cinnamon, vanilla (or other flavors/extracts), nuts, seeds, berries/fruit, sugar free preserves, or whatever you like. I like to add 1 or 2 tablespoons of heavy cream.
Nutrition information will vary slightly depending on what you add, but the basic recipe has roughly 4g net carbs, 12g fiber, and 20g protein.
