Ingredients
5 oz Raw boneless skinless chicken breast
? cup Raw lentils
¼ cup Chopped carrots
¼ cup Chopped onion
¼ cup Chopped raw sweet red pepper
½ tsp Minced garlic
? tsp Dried thyme
1.5 tsp Lemon juice
2 tbsp Diced celery
1 tbsp Chopped parsley
¼ tsp Ground black pepper
2.5 tsp Olive oil
Instructions
Grill chicken breast. Combine lentils, carrots, onion, red peppers, garlic and thyme in a pan. Add water, covering the mixture by 1 inch. Bring to a boil, reduce heat and simmer uncovered for 15 to 20 minutes or until lentils are tender. Drain lentils and vegetables. Add olive oil, lemon juice, celery and pepper. Mix well. Serve with grilled chicken breast. Prep time: 10 minutes. Cooking time: 20 minutes.
