Made with love, way better than from a box—and just as easy! I always double the cheese sauce and freeze some for later. It’s great on broccoli and other cooked veggies—OR just another batch of mac ‘n cheese.
Cook the macaroni according to the package directions; drain well. For the cheese sauce, in a saucepan sauté the onion in the butter until tender but not brown. Stir in the flour, salt, and pepper. Add the milk all at once; cook and stir until thickened and bubbly. Cook and stir 1-2 minutes more; add cubed cheese and stir until cheese is melted. Combine the cheese sauce and the macaroni and turn into a 1 ½ quart casserole dish. Bake uncovered at 350-degrees for 30-35 minutes or until heated through and a light crust forms on top. Makes 6 servings.
