Marinated grilled skirt steaks served on warm flour tortillas. Mmmm, one of my favorite meals. This has been served in my family on Mom's birthday since about 1984.
To prepare:
Place strips of beef in nonreactive dish with olive oil, worchestershire sauce, and garlic. Cover and marinate overnight, turning once.
To cook:
Cover grill grates in foil and poke a few hole to allow grease to drain. Place meat on heated grill in a single layer. Turn as needed. Cook until medium-rare to medium.
To serve:
Place strips of meat on tortilla and top with salsa, sour cream, or your favorite condiment.
*I plan on trying this recipe with beef heart instead of skirt steak
