This is a take on the traditional Rwandan Isombe. I omit the ground nuts which in my opinion makes it taste perfect.

Mince onions and garlic. drain sardines and rinse off tomato sauce. Cut chuck roast into 1 to 1.5 inch cubes. Put all ingredence into a large pot and cook on a med simmer for 2 to 4 hours. Vent the lid a little to allow water vaper to escape. add water as needed to keep from drying out. Should end up beeing wet but not have too much water, to where if you eat on rice, the liquid is soaked up but not soupy.
Eat with Rice or Ugali. In Rwanda this is served as a side with other dishes, but we often usualy make it as a main dish since it has beef in it, then use left overs as a side.
