1 Preheat oven to 325?. Micro choco? on HIGH 1 min 15 sec or until choco is melted and smooth, stirring at 15 sec intervals. Beat butter at med speed 2 min or until creamy. Gradually add granulated sugar, beating 5-7 min or until light and fluffy. Add eggs, 1 at a time, beating just until yellow disappears after each addition. Stir in melted choco, syrup and vanilla until smooth.
2. Combine flour and next 3 ingred; add to butter mixture alternately w/buttermilk, beginning and ending w/flour mixture. Beat at low speed just until blended after each addition. Pour batter into greased and floured 10 in tube pan.
3. Bake for 1 hour and 10 min or until wooden pick inserted in center comes out clean. Cool pan on wire rack 10-15 min; remove from pan to wire rack and let cool completely (about 1 hour and 30 min). Sprinkle w/ powdered sugar, if desired. Serve w/Mexican Chocolate Sauce. Garnish w/toasted almonds, if desired.
Mexican Chocolate Sauce
8 oz semisweet chocolate baking squares, chopped
3/4 c. whipping cream
2 t. light brown sugar
1/4 t. ground cinnamon
1/4 t. almond extract
Pinch of salt
1 T. butter
Cook first 6 ingred over low heat, whisking occasionaly, 3-4 min or until mixture is smooth and chocolate is melted. Remove from heat. Whisk in butter until melted. Serve immediately.
