So good my kids prefer it to store bought, and (somewhat) healthier too!
Preheat oven to 375.
Blend together butter, applesauce, and sugars. Add egg whites and vanilla and continue mixing.
Combine flour, baking soda, baking powder, and salt. Slowly mix into butter mixture.
Gently stir in oatmeal and chocolate chips.
Drop by teaspoons onto greased baking sheet and bake for 12-14 minutes.
This is a very adaptable recipe!
Variations:
* Replace some or all of the chocolate chips with up to 1 cup of chopped walnuts, pecans, dried cranberries, and/or raisins.
* Replace the butter and applesauce with 1/2 cup peanut butter + 1 tablespoon applesauce.
* Replace the brown sugar with 1/2 cup Splenda (or other sugar substitute) + 1/2 cup brown sugar.
