Our kitchen has many classics that we like to play around with, and these mini-meatloaves are perfect for meal prep and low-carb eating all year! Light and moist, they're topped with a sauce that is SO simple you'll never believe it. Make these ahead of time and freeze or store refrigerated for a quick and easy snack you'll keep coming back to!

Preheat the oven to 350° F. Spray a standard-size muffin pan with cooking spray and set aside.
Heat olive oil in a skillet set over medium-high heat. Add the chopped onion and bell pepper and saute for 5 minutes until the vegetables begin to soften. Add the minced garlic and saute for 1 to 2 minutes more. Remove the skillet from the heat and let the vegetables cool for 5 to 10 minutes.
Place ground turkey in a large mixing bowl. Add the cooked vegetables, bread crumbs, milk, egg, Worcestershire sauce, salt, ground black pepper, and parsley to the bowl. Use clean hands to combine the ingredients.
Divide the turkey mixture evenly between the 12 muffin cups. Lightly press down on each mini meatloaf to fill the muffin cup and flatten the top.
Mix ketchup and yellow mustard in a small bowl. Spoon over the top of each mini meatloaf.
Bake for 25 to 30 minutes or until the internal temperature of the meatloaves reaches 165° F.
6 servings = 12 mini meatloaves
