This chocolate cake is fudgy, moist and super-chocolatey, making it perfect for Devil's Food cake.
CHOCOLATE CAKE:
>> Sift in flour, cocoa powder, baking powder and baking soda in a bowl and whisk it.
>> Cream butter in another bowl until pale and fluffy.
>> Add in oil, sugar, condensed milk, yogurt and vanilla extract and whisk it.
>> Add the dry mixture into the wet mixture in 3 batches, alternated with buttermilk.
>> Add in the hot coffee and mix well.
>> Transfer the batter into 3*7'' cake tins.
>> PREHEAT -- 170C for 10 min.
>> BAKE -- 170C for 35-40 min.
PHENI-PISTACHIO FILLING:
>> Add butter in a heavy-bottom saucepan.
>> Add crushed pheni & roast on medium flame until golden & aromatic.
>> Once roasted, add in the pistachio butter & mix well.
>> Transfer it to a plate & keep aside to cool down to room-temperature.
RASPBERRY REDUCTION:
>> Put raspberries in a bowl.
>> Mix in lemon juice & granulated sugar.
>> Keep it aside at room-temperature, for at least 1 hour.
>> Transfer these macerated raspberries to a heavy-bottom saucepan.
>> Cook on medium flame until mashed.
>> Meanwhile, prepare the corn starch slurry in a bowl.
>> Add in the slurry and cook until the filling is reduced and thickened.
>> Transfer it to a bowl & let it cool down to room temperature.
RASPBERRY WHITE CHOCOLATE FROSTING:
>> In an oven-safe bowl, add in the chocolate and melt homogenously.
>> Add in the raspberry reduction & mix well.
>> Cover the ganache with a cling film touching its skin & let it come down to room temperature.
>> Keep the ganache in refrigerator for at least 1-2 hour.
>> Whip ice-cold whipping cream to medium-soft peaks.
>> Add ganache & continue whipping until stiff peaks.
