Super easy recipe, great for cookouts or a side for any dinner really. Ingredients that you'd think don't sound good but believe you me this is an awesome dish!
Mix corn, cheese, green bell pepper, onion, and mayonnaise well, then add crushed chili cheese fritos and toss together.
Just a piece of advice, always wait to add the frito chips until you are actually ready to eat it, or when dinner is served. If taking to a get together, take the crushed fritos in a ziplock bag and add right before serving. They will become too soggy if added way before eating. This is an absolutely addictive salad. Enjoy!
